Maida (refined flour) - 2 cup (200 gm)
Mangraila  - 1/2 tsp
Ajwain - 1/2 tsp
Ghee or Refined Oil - 6 tbsp (for moyan)
Salt - 1/2 tsp
Refined Oil for deep frying - As required

Method of Preparation

1. Mix thoroughly ajwain, mangraila, salt and 6 tbsp ghee with maida.
2. Knead to a hard dough using a little water at a time.
3. Divide the dough in 4 equal parts.
4. Roll out each part into 3-4 mm thick rotis.
5. Cut the rotis into 5 mm wide strips using a knife.
6. Cross cut to make 1" long nimki pieces.
7. Deep fry nimkis to golden brown colour on low to medium heat.
